Spaghetti squash with sauteed apples and pecans
One small to medium spaghetti squash
Three large Mcintosh Apples (or whatever kind yo…u prefer)
1/4 cup pecans, chopped
1/4 cup brown sugar
A good drizzle of honey (to taste, basically and you want to create a sauce)
Three tablespoons of butter
Seasonings to taste:
Cinnamon
Ginger
Nutmeg
Allspice
*I use a dash of each with a little bit heavier on the cinnamon.
Cut squash in half and remove seeds and whatnot. Place squash in about 1/4-1/2 cup of water in a skillet, cut side down on med-high for about 10-15 minutes or until fork tender.
While that is cooking skin, dice and chop your apples and chop your pecans. Throw them in another skillet with the rest of the ingredients and sautee untill apples are soft.
When squash is fork tender, scrape out the strands into a bowl, by then your apples will also be done - mix the whole thing together.
Voila! Eat and enjoy :)
